101119 Brunswick Stew Recipe



Chef Hayden’s Brunswick Stew Recipe

Ready in … 8 hrs on low heat

Serves … 8-10

Ingredients …

  • 2 (10 ounce) cans castle berry barbecued pork
  • 1 (16 ounce) can diced tomatoes w/ mild chilies
  • 2 (10 ounce) cans cooked chicken, drained
  • 1 (16 ounce) can whole potatoes sliced
  • 1 (16 ounce) can cream-style corn
  • 1 (16 ounce) can white corn kernels, drained
  • 1 (16 ounce) can carrots, drained
  • 1 (16 ounce) can lima beans, drained
  • ½ yellow onion, chopped
  • 12 cup hickory flavored barbecue sauce
  • ½ cup chicken stock
  • 12 oz. v8 vegetable juice
  • 12 oz. can of DrPepper
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar (substitute ½ cup sorghum molasses)
  • 1 tablespoon vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoon Texas Pete hot sauce (if desired)

Directions …

  1. Mix all ingredients together and pour into a large crock pot.  Cook on low heat for 8 hours stirring occasionally.  
  2. This can be cooked on high for 4 hours but you need to watch it more closely for sticking.
